yt heads?

i was on a charter recently and saw the deckhands askin the guys if you wanted to keep the heads of there Yellowtail?? is there somce special meat im missin out on? if so how would u prepare a head?

Mother-in-law is Chinese.
She cuts out the cheeks....... really good stuff!
Then she splits the head open and boils it, the meat and broth maked great soup when mixed with some green onion, cilantro, salt, pepper, & elbow macaroni.

Hamachi Kama - season and bake (or bbq in foil). Tastes surprisingly good - fun to serve and watch peeps poke & pick at it.

Drizzle the head with olive oil and a few spices of your liking. Salt, Pepper, Garlic Powder, whatever and bake on a tray in the oven 350* about 15-20 mins and serve.

Just like mentioned above, watch the people pick away. Good stuff, try it.

I've steamed some rock fish whole and there is a lot of meat around the sides of the head, a small medallion of meat that is the cheeks, as well as across the top of the head. Never done yellowtail heads.

Also attached to the heads is probably still the "collar". I have taken those, lay them out flat and either broil or grill them. There's a long hard bone just behind the gills, and inside of that is a chunk of meat that is as good as, if not better, than the cheeks. Coat it all with a little terriyaki, then grill it until the skin starts to bubble of... Same thing with the bellies... some good stuff there!!
