| The best fillet knife?
So what do you like to use, is there one knife that does it all? (I wish)
Or do you own about half a dozen specialty knifes like I do and do you prefer stainless steel over carbon steel?
Can you sharpen a knife to a razors edge and keep it that way or are you one of those "Special" people that should never own anything better than a Ginsu knife.

I am in love with my 10" Forschner. Does just about everything. If I could have only one knife, that would be it. Surprisingly inexpensive for the quality you get.
Also have a ginormous no-name (from SQC) scimitar breaking knife. About 15" or so. It'll knock the slabs off a 30# tuna in one swipe, no sweat.
For fine stuff I have a couple Rapala 6" & 9" filet knives. Still some of the best after all these years!
I prefer stainless. I always have a stone at my table & a swipe or two once in awhile & yer good to go.

Yep, to sharpen, get a good sized flat diamond sharpener. http://www.knivesplus.com/index.html
has them pretty cheap. When you sharpen, hold a 19-24 degree angle to the stone. Big your angle and stay with it. 19 degrees get's super sharp but will lose the edge quicker. Some go as high as 27 degrees. I keep mine around 21.
