Branman asked about how I freeze fish. Here's some of the fish I caught this week, mainly reds. Read this method in SouthCoast Sportfishing magazine in about 1985. Have used it since. Make sure to wash and dry your filets real good. Put a dinner into a ziplock, then seal in foil, then wrap in feezer paper sealed with duct tape, label, freeze on shelf without stacking, once frozen stack like cord wood.
\Haven't seen that method before . I bet it works reall good though . You've got insulation around the fish to protect it from the Elements . My technic was with you up til the duct tape and freezer wrap . Once filleted I always towel dry after the rinse I then place the patted dry fillets into a ziploc . Depending on how tired I am I either suck the air out or use a straw to get all the air out of the bag . The straw is best . Seal the Ziploc with as little air as possible . Stack single layer in freezer . You know the rest . My next method is going to be vacum sealer this year and Canning if I can find the time .
Before I got a vaccum sealer (which I'm not sure is any better) I used a similar method.
I would rinse and towel dry all fillets. I would then wrap in a few layers of saran wrap, squeezing out all the air. Then I would roll up in freezer paper. You have to use the good stuff like in the picture that has the plastic side. The technique is to roll the fillets up with the ends folded in (like a burrito). This, again, eliminates trapped air and makes for a good package. Fish wrapped in this manner will easily last a year. Works great with wild game too.
