Some of the best wahoo fishing I have ever experienced was during the first week of September at Alijos aboard the Polaris Supreme. Anytime the water temp there is 70 degrees or above you have a shot at wahoo. In September it averages 76 to 77 degrees.
Considering it is a 2 day boat ride to get there, and a 2 day boat ride to get home, a 7 day trip can certainly get you there but limits your options to go in to the ridge which also has tremendous wahoo fishing that time of year.
One thing wahoo don't like is boat pressure. Nothing will shut a wahoo bite down faster than to have several boats trolling back and forth over the fish. If the Searcher trip you are looking at has several other boats out on similar length trips during the same time frame chances are those boats will be on their way, there, or on their way back from the rocks. The ultimate wahoo fishing scenario would be to have the place to yourself AND not to have any boats that have fished it for several days, a week, or more. That formula can add up to tremendous wahoo fishing IMO.
The Polaris Supreme trip that I rode for 7 straight years, a 9 day that was originally sponsored by Catchy Tackle, always left late August or the first week of September. We had incredible wahoo fishing, both at the rocks and in on the ridge, and never saw another boat the entire time. The rocks were always just corroded with yellowfin as well, but it was mainly a wahoo trip. If I am not mistaken, the Supreme put that trip back on the books last year and will probably continue to run it. When I went it was always limited to just 20 anglers. It was epic.
The only downside to early September trips would be hurricanes coming up the baja coast. In a worst case scenario a hurricane might make going to the rocks not possible. Several years ago that situation presented itself and we fished Guadalupe for two days to let the hurricane pass and then we rolled on down to the rocks. The wahoo were waiting for us...
Sorry for the long reply but you may want to consider a slightly longer trip to increase both your odds and options for wahoo. You may also want to analyze what other long range boats will be out and when and try to find an opening of thin coverage at any given time if wahoo is what you are after.
Good luck...
