The mounts are identical so swapping sides shouldn't do anything.
The mounts should be pointed to the side I think so the 45 degree up angle on the mounts coupled with the 45 angle on the rigger poles cancels out in the fishing position and they are paralell with the water oriented horizontally. When running they would be locked vertical. I don't know about these riggers. They may not be the best choice. The lee setup I have seen on the internet appears a bit more robust.
