Mahi Scampi (Beach House Style)

Here is my loose recipe for Mahi Scampi, it's pretty hard to mess up so don't sweat things being exact. Did this the other night and it got high praise.

Cut fillets into serving size portions, salt and fresh ground pepper to taste.
Mince/chop up about 2tsp of garlic for each fillet you are cooking
In large saute pan on med/high heat melt about 2-3 tbls of butter for each fillet being cooked.
Add garlic to melting butter and cook until all butter is melted and garlic gets a little opaque. Pour in about 1/8-1/4 cup of white wine per fillet and bring back up to bubbleing hot and add fillets, butter wine sauce should cover about 1/4-1/2 of fillets when they are in the pan, this is a saute not at boil or a fry. Cook until color change is 1/2-2/3 up fillet. At this point add about 1-2tsp of capers per fillet to pan, also pour a little of the caper juice in to pan. Turn fillets over and cook until just under done as they will finish cooking a bit off the heat.

We servered it over white rice Hawaiian style with some grilled veggies on the side, would also be great over pasta.
