Having Bill picking up a couple of Dodo's on my birthday trip, I fixed it up in style.

Cut the fillets into serving pieces, dredged in flour then egg and a mix of Panko and Coconut Flakes. About two to one on the panko to flakes.
Fried until brown.
Fresh Mango Salsa-- My own recipe sans pineapple
Jasmine Rice
Fresh sugar snap peas.

Bill just got the BD salute on the 405 and will be home in a few.
Nice Friday evening dinner.
