Bacon wrapped Yellowtail

After hearing from Kelly (penetrator) about how good his bacon wrapped yellowtail was, I decided to make some myself with the fresh forkie that we caught on saturday

Here's the fixings we made for dinner at FishWiz's pad and it came out killer:

Salad: Spinach salad with toasted pecans, crumbled gorgonzola and tomatoes with raspberry vinagrette dressing

Starch: Garlic and spinach risotto

Fish: Prepared the fish by rinsing and cutting into smallish 2x3" chunks and rubbing down with olive oil. Lightly dusted with fresh ground pepper, kosher salt, garlic powder and some BAM! (essence of Emiril). Let marinate for a half hour and then wrapped maple smoked bacon around the edges and pinned with a toothpick. Grill until fish is flaky and white but still moist.

Serve with a chilled glass of good white wine like a Beckman Roussanne and enjoy!!!!
